Holiday Mocha Cheesecake Bars

Directions

1Preheat oven to 350.

2Coat the bottom of an 11x7 baking pan with butter or cooking spray.

3Mix meal, flour, diced butter ¼ cup Fructevia, Steviva Brand Stevia Blend or a dash of Steviva Brand Stevia Powder in food processor. Add instant and blend until the mixture is crumbly but yet moist.

4Set aside 1/2 of the crumb mixture for crumb topping.

5Press remaining mixture into the bottom of buttered/sprayed baking pan.

6Bake crumb topping mix you set aside and the crumbs you pressed into the baking pan for about 10 minutes.

7Cool for 10 minutes or so.

8Keep the oven on.

9Stir remaining 5 teaspoons of instant coffee, 1 tablespoon unsweetened cocoa powder, 1 tablespoon cream and vanilla in a small bowl until powder dissolves.

10Beat the cream cheese in large bowl until smooth.

11Add the 1/2 cup Fructevia, Steviva Brand Stevia Blend or a dash of Steviva Brand Stevia Powder and beat to blend.

12Then add the coffee cocoa mixture and then the egg.

13Spread filling over the crust. Bake until set...25 minutes. Chill uncovered for a couple hours or longer.

14Top with whipped cream (optional) and enjoy.
