Makes approximately 8 servings


INGREDIENTS:
1 cup ground pecans
3 tablespoons butter, melted
2 teaspoon

1/2 teaspoon coconut extract
1/2 cup heavy cream
2 teaspoon
Steviva Brand Stevia Blend
1 (.6 ounce) package sugar-free lime-flavor gelatin
1/3 cup boiling water
1/3 cup cold water
2 (8 ounce) packages cream cheese, cut into pieces and softened
1/2 teaspoon coconut extract
2 tablespoons ground pecans

DIRECTIONS:
1. In a medium bowl, mix together 1 cup ground pecans, butter, 2 teaspoon Steviva Brand Stevia Blend , and 1/2 teaspoon coconut extract. Press firmly into bottom and up sides of an 8 inch pie plate; refrigerate until firm.

2. In a small bowl, whip the heavy cream with 2 teaspoon
Steviva Brand Stevia Blend until soft peaks form. Set aside.

3. In a large bowl with high sides, mix the gelatin with boiling water until all the gelatin has dissolved. Then stir in the cold water. With an electric mixer, slowly beat in the cream cheese. After all cream cheese is added, stir in remaining 1/2 teaspoon coconut extract, and beat at high speed until smooth. Carefully fold in the whipped cream. Use a spatula to scrape mixture into the pie pan and spread around. Sprinkle remaining 2 tablespoons ground nuts on top. Refrigerate several hours or overnight to allow gelatin to set thoroughly.

Meditation
the pathway to excellent health

I hesitate to use the word meditation. To me, as well as many others, the word "meditation" conjures up the picture of a bearded man sitting cross-legged in front of an entrance to a cave or high on a mountain top. Climbing the mountain and reaching him is part of the arduous journey toward self-fulfillment, self-improvement. Once we find him we ask, "What is the meaning of life?" or "How do we achieve peace in ourselves and our lives?" This all-knowing man tells us the answers are "inside ourselves" and tells us to go and contemplate. I don't know if that answer was worth the journey!

Well, I am not a wise man on a mountain. I am just like you -- involved in life and work, seeking more serenity and calm in my life. I am still learning but I am finding that it is really helping me balance my life and greatly reduce my cortisol levels.

Research has shown that meditation can contribute to your physiological as well as your psychological and well-being. This is accomplished because meditation brings your brainwave pattern into an alpha state, which is the level at which healing begins.

Free Weights Vs Machines To Build Muscle & Strength

So often I am asked which works better and building a better body; free weights or machines. Personally I use them both but I have found that f
ree weights provide a more complete workout. However, they also require more expertise in their use. When lifting free weights like barbells and dumbbells, not only is the prime mover or Agonist being worked but all the muscles responsible for stabilizing the joint. The result is to increase the strength of the stabilizer muscles. Greater care is required when using free weights. Improper technique can result in injury to the user or bystander if the weights are dropped.

It is important to remember to enlist the aid of a spotter whenever free weights are raised over the head. A spotter's responsibility is to insure the safety of the user during the execution of the exercise. The spotter must observe the condition of the user and try to anticipate exhaustion. The spotter must also insure that balance and an even lift is executed, that proper breathing technique is adhered to and that proper form is being executed by the user. A spotter's strength is not as important as his or her vigilance.

Machines provide a safer workout than free weights. Machines also specifically target a particular muscle automatically. It's harder to cheat during an exercise by incorporating unintentional muscle groups. However, since lateral movement is generally restricted, machines do not provide as complete a workout.

When lifting overhead with machines, a spotter is not necessary since the weights are confined to a rack and not directly overhead. Some machines are not adjustable for height or length of limbs on an individual basis. This can cause poor fit and even undue stress on joints when the supporting pressure incorrectly applied. The Biceps Curl and Triceps Concentration machines in many gyms are not adjustable and may cause undue stress on elbow joints instead of applying pressure to the back of the upper arm along the triceps.

In summary, free weights provide the best workout when a spotter is available and proper lifting technique is executed. In contrast, machines provide a better workout than could be safely achieved using free weights when a spotter is not available.

When you are working out don't forget to drink plenty of water! 6-7 large peaches
juice of 1 lemon

1/2 cup sifted whole grain flour
3/4 cup rolled oats

Instructions

With Honesty Comes Personal Power

"Honesty is the ability to match up our insides with our outsides. It allows what we don't care about to go away and what we really want to appear and develop in our lives."

This may sound corny but, the other day I was watching an episode of "24", which is my favorite show incidentally. During the show Jack Bauer, the main character was negotiating with a suspect. The guy asked for his word. Jack replied "how do you know I just won't put a bullet in you later" and the suspect replied "because I know the value of your word". As campy as this may seem it really made me think about keeping ones word and further more the extreme power of honesty.

Getting honest and learning to live openly with ourselves and others is such a big part of spiritual growth, it becomes a general principle through constant application. Honesty and integrity tells us what to do in situations that may be turning points for us. By applying spiritual principles, like honesty, we automatically make ourselves as more trustworthy, a better friend and a reliable human being. Since like attracts like, we can be honest enough for it to become our normal thing to do: an acquired learning that becomes habitual. When this happens the world opens up to us.

As we come to realize that we are loved and respected for our honesty, we can come to other truths about ourselves. Dishonesty gives others power over us. Honesty allows us to increase our personal freedom.

Honesty, as a principle, tells us to turn away from lies and falsehoods; to turn towards reality and get used to using the new power spiritual growth brings. If we honestly don't like our jobs, we change jobs. If we have amends we need to make, we become willing and make them. If we're not happy in our associations or relationships, we use the power of spiritual connection and find a way to become happy.

Awareness in itself is not honesty, but it is a prerequisite. As we slowly become aware of our actions and feelings and their consequences, we need to be honest about our motivations. We can fool others, but we can't afford to fool ourselves. As we become more aware of our actions, we begin to realize that self-awareness is indeed the key to our personal growth.

Abraham Lincoln was said to walk back several miles to a store when he noticed he had been given one penny too much in change. That was a sense of being honest and not taking what doesn't belong to you. When Lincoln returned the overpaid penny, he probably received thanks from the store owner but the real reward came in the sense of satisfaction he had in being honest. And the rest they say is "history".

Are Artificial Sweeteners Safe?
nearly two thirds of the public question the safety

According to a June report by Mintel, nearly two-thirds of Americans are concerned about the safety of artificial sweeteners such as sucralose and aspartame, which could impact the direction of the sugar-free foods market.

Although sales of sugar-free products have not declined, 64 percent of Americans claim to be concerned about artificial sweeteners' safety. More statistics have recently surfaced showing that the sugar substitutes raised health concerns.

"The uncertainty [of sweeteners' safety] is not stopping people from using sugar-free products," said Marcia Mogelonsky, senior analyst for Mintel, the firm that conducted the research. "But as far as customers are concerned, moderation is key once they have chosen the substitute they feel is safest."

The sugar-free foods market in the United States has grown 24 percent since 1999, and was a $5.9 billion market in 2005. The majority of sugar-free food consumers are diabetics and people trying to lose weight. In 2002, 6 percent of the U.S. population was diabetic, while 60 percent were overweight, which spells a huge potential growth in demand for low-calorie and sugar-free foods.

However, the report also states that although sugar-free foods do not satiate the appetite as well, which can lead to increased consumptions of the foods containing potentially dangerous artificial sweeteners.

Mintel's report says there is a need for a genuinely safe sweetener, since it seems consumption of artificially sweetened foods will remain high, in spite of consumers' safety concerns.

To date, the FDA has refused to recognize stevia, a natural herbal sweetener, as a safe ingredient in foods. Stevia is widely used throughout the world as a safe, zero-calorie sweetener. In the 1990's, the FDA ordered the destruction of history books and recipe books promoting the use of stevia.

  5. Exercise outdoors. Research shows that being exposed to natural light can make you feel more energetic. Now that the weather is cooperating and the days are longer, go to a park or beach and run, walk, cycle, rollerblade or swim. The varied terrain will challenge your body in ways that indoor exercise machines can't.
  6. Steer clear of salty snacks. They're usually packed with fat and often leave you feeling bloated, dehydrated and generally sluggish.
  7. Divide and conquer. If you're very busy during the day and can't work out for a full hour at a time, break it up into two half-hour sessions. For example do a half hour of aerobic exercise at lunch and a half-hour of weight training after work or vice versa.
  8. Wear sunscreen. Try to avoid exercising outdoors between the hours of 10 a.m. and 3 p.m. when the sun is at its peak, but no matter when you choose to do an outdoor workout make sure you slather on the sunscreen. Choose one with an SPF (sun protection factor) of 15 to 30 and put it on at least 20 minutes before going out so it has time to penetrate your skin.
  9. Workout in water. Take advantage of your visits to a pool, lake or the ocean by incorporating exercise into your leisure time. Tread water while chatting with friends, jump over ocean waves or walk laps in the pool. The added resistance of the pool water will give your legs a great workout and burn lots of calories.
  10. Make lemonade. Drinking iced tea or coffee may seem like a great way to quench your summertime thirst but these beverages may end up doing just the opposite. Both act as diuretics and can cause dehydration, especially if you've been perspiring. A better choice is a tall, frosty glass of lemonade or any fresh fruit juice poured over ice - you'll get extra vitamins too. YOUR RECIPE

All Natural Sugar Free Curried Red Pepper Soup
Serves: 6
Carbs Per Serving: 12 g
Prep Time:<15 minutes

Skill Level: Easy

1 ½ pounds red, yellow, or orange sweet peppers (about 5-6)
½ cup chopped red onion
1 cup water
2 tsp. chicken bouillon granules
1 ½ tsp. curry powder or, to taste
½ tsp. dried thyme, crushed
½ tsp. dried marjoram, crushed
1 tsp. garlic powder
3 ounces cream cheese
1 2/3 cups whipping cream
Sour cream (optional)

Halve peppers, seed, and remove internal membranes. Place on aluminium-foil covered cookie sheet and roast at 450 degrees for 10 – 15 minutes, until skins start to turn black and bubble. Place in paper bag to steam and cool. When the peppers can be handled, remove skins and slice peppers into strips and place in a pan with onion, water, bouillon granules, curry powder, thyme, marjoram and garlic. Simmer for 15 minutes. Add cream cheese cut into chunks. Puree mixture in blender or food processor until smooth. Stir in cream. To serve, swirl a teaspoon of sour cream on the top of each bowl.

Does Low Carb Really Work?

Low carb diets are diet programs that are designed to promote weight loss while at the same time attempting to restrict the consumption of carbohydrates. The idea behind a low carb diet is that the consumption of carbohydrates is linked to obesity and increased insulin levels. Some nutritionists share various opinions regarding the validity and safety of a low carb diet, while others rely on the seemingly strong evidence that lends truth to the claim that a low carb diet can actually promote weight loss.

A low carb diet is specifically geared toward eliminating or reducing the foods that contain sugar, grains and starches. Because each of these products are categorized as carbohydrates, they are replaced with various other foods containing increased levels of fat and protein. Many dieters include vegetables as part of a healthy diet and even though they too are considered to be carbohydrates, vegetables are thought to be healthier than grains.

There are two sides to the low carb theory, however, with individuals who oppose and those who agree with the approach. Specifically, those opposed to the use of a low carb diet may recognize the risks and possible side effects, including headaches, fatigue, nausea, dizziness and/or dehydration. Some believe that the replacement of cholesterol and foods high in saturated fat my increase the risk of developing heart disease. There are also some concerns that kidney problems may ensue as a result of the organs becoming overworked, but there are no scientific studies to support this theory as of yet.

Over the past 10 years studies have reviled the low carb and low glycemic diets are effective in affecting weight loss. Lifting weights or doing strengthening activities like push-ups and crunches on a regular basis can actually help you maintain or lose weight. All Natural Sugar Free Tropical Raspberry Smoothie
Serves: 4
Carbs Per Serving: 16 g
Prep Time:<10 minutes

Skill Level: Easy

Coconut milk adds an exotic twist to this refreshing morning shake. Be sure not to confuse sweetened “cream of coconut” with unsweetened coconut milk.

Ingredients:
1/2 cup unsweetened coconut milk
4 ounces (scant 1/2 cup) silken tofu
1/2 cup fresh raspberries or berries of season, plus more for garnish

1 to 2 drops coconut extract, to taste
3 ice cubes
Whipped cream, for garnish

Directions:

The First Week of the New Year

Are you still penciling out those New Years resolutions? Well… here’s a few tip to help you through the struggle. In order to embrace the new, we must release the old. A trapeze artist can not swing from one bar to another without letting go. An important part of moving forward in this New Year is to review the past year—to release it--and to learn from it.

To go where we wish to go and be whom we wish to be, we need to know where we are and who we are. An honest self-analysis is always helpful to gain clarity. Considering all that happened in 2005, it seems particularly fitting to devote some time to reflecting on the year past and where we find ourselves in the dawn of this new year ahead.

The following questions should stimulate your thinking for this process. I hope that you take time out of your busy schedule to ponder where you are and where you've been. Talk with people you care about. Write out your thoughts and feelings. Do some journaling.

Reflect upon what you did, how you felt, what you liked, what you didn't and what you learned. Try to look at yourself and your experience with as much objectivity as you can-much like a biographer would.

Here are some suggestions to get you started in mulling over the past year-perhaps the last decade. Feel free to add your own.

1. What did I learn? (skills, knowledge, awareness, etc.)

2. What did I accomplish? A list of my wins and achievements.

3. What would I have done differently? Why?

4. What did I complete or release? What still feels incomplete to me?

5. What were the most significant events of the year past? List the top three.

6. What did I do right? What do I feel especially good about? What was my greatest contribution?

7. What were the fun things I did? What were the not-so-fun?

8. What were my biggest challenges/roadblocks/difficulties?

9. How am I different this year than last?

10. For what am I particularly grateful?

Another Suggestion: Consider listing all the things in your life of which you'd like to let go--anything you no longer want. Give thanks for what they've brought you in terms of learning and usefulness and then burn the list. It's a symbolic gesture to help you release the old and be open to the new. The next step is to list what you DO want-experiences, knowledge, material things, relationships, healings,
whatever.

In doing this, you'll be using the principle of vacuum--releasing what you don't want and embracing what you do. Some friends of mine lit a bonfire and burned their lists as well as a few other articles that represented something they no longer desired in their lives. One of them burned an old (and too big) article of clothing to symbolize a less-than-impeccable wardrobe and garments that belong to a heavier person than they will be in the coming year.

I'm confident that anything you can do to make this year more dramatic in terms of your own personal and spiritual growth will be valuable.

Using Your Inner Guidance System
We know that the body has a natural bias toward health and energy. It’s designed to last for 100 years with proper care and maintenance. When something goes wrong with any part of our body, we experience it in the form of pain or discomfort of some kind.

We know that when our body is not functioning smoothly and painlessly, something is wrong, and we take action to correct it. We go to a doctor; we take pills; we undergo physical therapy, massage or chiropractic. We know that if we ignore pain or discomfort for any period of time, it could lead to something more serious.

How To Tell Right From Wrong
In the same sense, nature also gives us a way to tell emotionally what’s right for us and what’s wrong for us in life. Just as nature gives us physical pain to guide us to doing or not doing things in the physical realm, nature gives us emotional pain to guide us toward doing or not doing things in the emotional or mental realm. The wonderful thing is that you’re constructed so that if you simply listen carefully to yourself—to your mind, your body and your emotions—and follow the guidance you’re given, you can dramatically enhance the quality of your life.

Just as the natural physical state of your body is health and vitality, your natural emotional state is peace and happiness. Whenever you experience a deviation from peace and happiness, it’s an indication that something is amiss. Something is wrong with what you’re thinking, doing or saying. Your feeling of inner happiness is the best indicator you could ever have to tell you what you should be doing more of and what you should be doing less of.

The Messenger
Unhappiness is to your life as pain is to your body. It is sent as a messenger to tell you that what you’re doing is wrong for you.

Very often, you’ll suffer from what has been called “divine discontent.” You’ll feel fidgety and uneasy for a reason or reasons that are unclear to you. You’ll be dissatisfied with the status quo. Sometimes, you’ll be unable to sleep. Sometimes, you’ll be angry or irritable. Very often, you’ll get upset with things that have nothing to do with the real issue. You’ll have a deep inner sense that something isn’t as it should be, and you’ll often feel like a fish on a hook, wriggling and squirming emotionally to get free.

Divine Discontent
And that is a good thing. Divine discontent always comes before a positive life change. If you were perfectly satisfied, you would never take any action to improve or change your circumstances. Only when you’re dissatisfied for some reason do you have the inner motivation to engage in the outer behaviors that lead you onward and upward.

Listen to yourself. Trust your inner voice. Go with the flow of your own personality. Do the things that make you feel happy inside and you’ll probably never make another mistake.

Action Exercises
Here are three steps you can take immediately to put these ideas into action.

First, listen to yourself and trust your own feelings. If there is a part of your life that causes you stress and happiness, resolve to deal with it.

Second, identify those areas of your life where you are dissatisfied or frustrated for any reason. What changes should you, could you make?

Third, remember that nature wants you to be happy, healthy, popular and prosperous. Any deviation from those conditions is a signal to you that action is necessary.

Stretch. You need to do this to make your muscles, ligaments and tendons more flexible so you can move with greater fluidity and be less prone to aches and pains.

Lift. Pick something up. Put it down. There. That's what strength training is all about. Muscles grow in response to the demand for work. Push them a little harder than they're used to being pushed and they grow a little more. Muscles that become stronger don't necessarily show, but you sure can feel the difference.

Move. When you do any activity vigorously enough to raise your heart rate, you're actually exercising your heart, lungs and your entire circulatory system. Known as aerobic conditioning, this kind of exercise increases your capacity for any physical activity, whether dancing, sports or merely the ability to walk briskly without becoming winded.

Sugar Free All Natural Gingersnaps
(makes 24 servings)
skill level: Easy

Ingredients:
1 3/4 cups almond flour
1/2 cup + 2 Tablespoons whole grain flour
2 teaspoons baking soda
1/2 cup softened butter
2/3 cup Apple Sauce
1/8 Teaspoon All Natural Steviva Brand Stevia Powder
3 teaspoon dark molasses
1 teaspoon vanilla extract
1 1/2 teaspoons ground ginger
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
Steviva Brand Stevia Blend for sprinkling on cookies (optional) Gingersnaps

Instructions:
Preheat oven to 300°F.
Cream butter with applesauce, molasses, and Steviva Brand Stevia Powder in a large bowl. Add spices and mix well. Set aside.
In a separate bowl, sift together almond flour, whole grain flower, and baking soda. Gradually add flour mixture to butter mixture. Combine to make a stiff dough.
