What is Erythritol?
A substance which occurs naturally in many fruits and vegetables now manufactured
by fermentation of glucose. With a calorific value close to zero (max 0.2Kcal/g)
with an appearance and properties very similar to sucrose but offering 70% of
the sweetness of sucrose, it is an ideal choice for many applications.
How
is it made?
By a fermentation process using a base material of a glucose-rich substrate
obtained by enzymatic hydrolysis from the natural raw material starch. Glucose
is then fermented by a yeast-like fungus to yield erythritol. It is crystallized
at a very high purity from the filtered and concentrated fermentation broth.
Is
it natural?
Yes. Erythritol exists naturally in a variety of foods, including mushrooms,
watermelons, pears and grapes. Erythritol is also founding fermented foods such
as cheese, wine, sake, beer and soy sauce. In addition, erythritol is present
in the tissues and body fluids of humans and animals.
What
is the Difference between Erythritol and a Substance like stevia with intense
sweet properties?
Stevia belongs to a group of substances known as intense sweeteners with 200
to 300 times the sweetness of sugar. Because stevia is so sweet, only a minute
amount is needed to provide a sweetness equivalent to sugar. None of the intense
sweeteners can alone substitute for the sugar in a food. Like all intense sweetners,
stevia must be accompanied by a bulk sweetener (or other bulking agent) in order
to replace the texture and body provided by sugar.
Erythritol is a bulk sweetener.
Erythritol is 60-70% as sweet as sugar. It can be substituted for sugar on a
pound for pound basis. Erythritol provides body and texture as well s sweeteness.
Does
Erythritol
Add calories? Because of its unique metabolic profile Erythritol adds only negligible
amount, actually less than 0.2 calories per gram maximum.
How
does the body Handle Erythritol?
Compared to other polyol sweeteners, erythritol has a high digestive tolerance.
In fact, it has the highest digestive tolerance of all polyols. As an example,
erythritol has a digestive tolerance 3-4 times better than that of sorbitol
and 2-3 times better than xylitol and maltitol. Erythritol does not cause undesired
gastrointestinal effects under its intended conditions of use. Based on clinical
studies in which erythritol was administered with foods and beverages at daily
doses up to 75-80 grams, a laxation threshold cannot be defined.
Is
it safe?
Yes. Clinical studies have consistently demonstrated the safety of erythritol,
even when consumed on a daily basis in relatively high amounts. Based on the
entire safety data package on erythritol, it is concluded by qualified food
safety experts that erythritol is safe for its intended use in food.
Over the past 10 years, erythritol has built up a history of safe use in Japan.
In the USA, erythritol was given a GRAS-status (Generally Recognized as Safe)
in 1997.
Erythritol was reviewed by the Joint WHO/FAO Expert Committee on Food Additives
(JECFA) during their meeting in Rome on June 1-10 1999 and JECFA awarded erythritol
an ADI (Acceptable Daily Intake) "not specified" which is the highest
safety rating that JECFA can give to a food additive.
The Australia/New Zealand Food Authorities (ANZFA) approved Erythritol in November
1999. Tawain approved erythritol in 1999. Korea approved erythritol in 2000
as a natural additive. Singapore approved erythritol in 2000.
Is
is tooth friendly?
Yes. Since mouth bacteria cannot metabolize it, erythritol does not promote
tooth decay.
Is
it safe for diabetics?
Yes. Clinical studies have proven that erythritol does not affect blood glucose
or insulin levels.
