Flourless Double Chocolate Almond Butter Cookies

Decadent, yet gluten-free and diabetes friendly!  Enjoy these alongside your favorite milk option for an added boost of protein!

This cookie recipe is so delicious that no one would ever guess these are both dairy-free and sugar-free!

 1 stick unsalted butter, softened
 2 tbsp creamy almond butter
 1 cup unsweetened cocoa powder
 0.67 cup Monksweet+
 1 large egg
 1 tsp vanilla extract
 0.50 cup unsweetened dark chocolate chips
Optional:
 1 tsp coarse sea salt (for sprinkling)

Preheat oven to 350º F and line a cookie sheet with parchment paper.

Add egg and vanilla extract. Continue to mix until just combined.

In a large mixing bowl, combine butter, almond butter, unsweetened cocoa powder and MonkSweet+. Use a hand mixer on low speed to mix until well combined.

Stir in chocolate chips. Use a spoon to drop mounds of batter onto cookie sheet 2-3 inches apart. Sprinkle each cookie with sea salt and bake for 15 minutes.

Allow cookies to cool on cookie sheet for 30 minutes before serving.
