Spiced Pumpkin Bars with Pumpkin Frosting


Heat oven to 350ºF.

Spray a 9×9 dish with olive oil spray.

Place all ingredients in a blender and blend well until smooth. The batter will seem like liquid, but it is okay.

Pour the batter into baking pan and bake for 45 minutes.

Cool the cake and prepare frosting.

Add frosting ingredients to blender or food processor and mix well until blended.

Frost the bars and consume. Place in fridge when not eating.

Sweetener Notes: For no-added calories, try using: MonkSweet+, Steviva Blend, or SteviaSweet! If you desire a reduced-sugar option, use CocoSweet+ or Fructevia.

15 oz. canned chickpeas, drained

2 eggs

2/3 cup egg whites

3 tbsp Fructevia

5 tbsp MonkSweet+

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tbsp regular butter, melted

2 tsp vanilla extract

1/3 cup canned pumpkin

1 tsp pumpkin pie spice

1/3 cup nonfat plain Greek yogurt

For Pumpkin Frosting

8 oz. 1/3 less fat cream cheese

1 tbsp coconut oil

1/3 cup canned pumpkin

3 tbsp MonkSweet+
