Apple Pie (the better for you version!)

We are in the peak of apple season right now. So this means top quality apples on the cheap. This apple pie recipe is a breeze to make and it totally delicious. You can of course tweak this to suit your fancy and make it your own. Bona Appétit.
Gluten-free, low glycemic index, and vegan!

For apple pie filling:
 0.75 cup water
 0.50 tbsp guar gum
 0.25 cup tepid water
 1 tbsp coconut oil (butter/margarine)
 0.25 cup Fructevia, Steviva Blend (or 1/8 teaspoon of SteviaSweet!)
 1 tsp ground cinnamon
 0.25 tsp ground nutmeg
 4 large apples
For gluten-free, vegan pie crust:
 1 cup almond meal
 0.67 cup coconut oil (margarine
 0.25 tsp salt
 5 tbsp icy water (approximately)

For apple pie filling:

Pre-heat over to 350ºF.

In a small saucepan bring water to a boil. Mix together the guar gum and cool water in a glass or small bowl.

Mix guar gum water mixture into the boiling water.

Stir this constantly on low heat for 2 minutes, then take it off the heat.

Melt the coconut oil slightly and blend it and the Fructevia, Steviva Blend or SteviaSweet! in to the pan that just came off the heat, with the guar gum and water.

Add in the cinnamon and nutmeg.

Peel the apples and remove cores. Dice them into bite-sized pieces.

Place into a mixing bowl.

Pour the guar gum mixture and spices over the apples and mix thoroughly.

Put the fruit into the pie crust, then crumble some of the pie crust mix over the top.

Bake for 45 minutes.

Let cool and enjoy!

For gluten-free, vegan pie crust:

Combine almond flour and salt in a mixing bowl, stir in coconut oil and mix until mixture resembles coarse crumbs.

Mix in water, 1 Tbsp at a time, until a dough is formed.

Refrigerate until ready to use. When ready, roll out and press in a pie pan.

Leave a little bit of the mixture to crumble over the top of the pie.
