Apple Pie Oatmeal Cookies

 1 cup quick cooking (minute) oats (measured correctly & gluten-free if desired)
 0.75 cup whole wheat or gluten-free flour (measured correctly)
 1 tsp baking powder
 1.50 tsp ground cinnamon
 2 tbsp coconut oil (or unsalted butter melted)
 1 large egg (room temperature)
 1 tsp vanilla extract
 40 ml Nectevia
 1 medium red apple (diced finely)

In a medium bowl, mix the oats, flour, baking powder, cinnamon, and salt together.

In a separate bowl, whisk the coconut oil (or butter), egg, and vanilla together.

Stir in Nectevia.

Add in the flour mixture to the wet ingredients, stirring just until just blended.

Fold in the apple.

Place in the refrigerator and chill for 30 minutes.

Preheat the oven to 325°F.

Line a baking sheet with parchment paper.

Drop the cookie dough onto the baking sheet and flatten slightly.

Bake for 13-15 minutes.

Cool on the pan for about 10 minutes, then transfer to a wire rack.
