Blackberry Apple Rose Cupcakes

 11 package of puffed pastry dough
 12.75 oz jar of no sugar added blackberry fruit spread
 3 large red delicious apples
 1 tsp cinnamon
 0.50 tbsp Fructevia
 0.50 tbsp lemon juice
 blackberry ice cream and fresh blackberries (optional)

Preheat the oven to 375ºF.

Unthaw the puffed pastry dough for 20-30 minutes.

Using a mandolin slicer, slice the apples paper thin on each side of the apple.

In a microwavable bowl, fill with water and 1 tbsp. lemon juice.

Add apples and cook for 3 minutes in microwave.

Cut apple almost in half.

Roll out puff pastry dough and make it thin.

Spread some blackberry spread on dough.

Add apples in the middle of the dough.

Sprinkle with cinnamon and Fructevia.

Fold the dough over the apples and roll up apple like a cinnamon roll.

Put in greased muffin pan and cook for 40-45 minutes.

Serve warm. You can serve with blackberry ice cream and fresh blackberries.
