Chicken in Chili Sauce

Chicken is a great source of protein and a great value, I might add. I made this recipe for dinner last night and it was deeeelish. It's a little bit spicy but can be toned down with the amount of the chili sauce you use and how spicy you make your chili sauce.

You are going to need chili sauce for this recipe. You could go to the store and buy it but, if you make it yourself you will save money and cut out all the sugar. Sweet chili sauce has 3 times more sugar than soda pop.

 12 sugar-free sweet chili sauce
 0.33 cup white wine or chicken broth
 0.25 cup olive oil
 10 garlic cloves (minced)
 4.50 tsp dried basil
 0.50 tsp salt
 1 tsp pepper
 8 chicken thighs (you can substitute chick breasts or tofu, I like the thighs because they are more flavorful)

In a large re-sealable plastic bag, combine the first seven ingredients; mix well.

Remove 1/3 cup for basting; cover and refrigerate.

Add chicken to bag; seal and turn to coat. Chill for at least 2 hours.

Drain and discard marinade from chicken.

Grill or bake, covered, skin side down, over medium heat for 20 minutes.

If baking, bake at 375ºF degrees for 35 minutes or until done.

Baste with some of the reserved marinade.

Turn then grill 10 minutes longer or until the chicken juices run clear, basting frequently.
