Chocolate Almond Truffles

Chocolate is a delicacy that ascends all lifestyles and cultures.  These chocolate truffles will fulfill all of your chocolate desires with absolutely none of the guilt.

 16 unsweetened Baker's dark chocolate (100% cacao)
 0.33 cup heavy cream
 0.50 cup Nectevia (any flavor)
 2 tbsp coconut oil
 1 tsp almond extract
Optional Coatings:
 0.25 cup roasted sesame seeds
 0.25 cup coconut flakes

In a medium saucepan combine chocolate, heavy cream, coconut oil, almond extract and your preferred flavor of Nectevia.

Heat over medium-low heat stirring regularly until chocolate is melted and smooth.

Pour mixture into a bowl and refrigerate for 2-3 hours.

Use a small spoon or melon baller to scoop chocolate and quickly roll into balls. Place on parchment paper.

Roll truffles in preferred coating and store in airtight container in refrigerator.
