Coconut Berry Granola Bars

The lovely thing about this recipe is all the variations you can do. Feel free to exchange the nuts, seeds, fats, fruits & grains for whatever you like. Just use the same volume. Cup for cup... dried fruits can be used instead of freeze dried. You can use extra nuts instead of oats or crisp rice, you can vary the ingredients all sorts of ways.

 0.25 cup coconut oil & butter ghee (or use butter or just coconut oil) 
 0.50 cup honey (or use maple syrup)
 0.50 cup almond butter (or any nut butter) 
 0.50 cup steviva blend & 2 tbsp molasses (or use 1 cup brown sugar) 
 1.25 cups GF oats 
 1 cup whole grain crisp rice cereal
 1 cup ribboned coconut 
 1 cup sunflower seeds 
 0.50 cup pumpkin seeds
 1.50 chopped pecans 
 0.50 cup freeze dried stawberries 
 1 cup freeze dried raspberries

Combine first set of ingredients in a large saucepan.

When the mixture is heated and bubbly add remaining ingredients.

Stir until well coated.

Let cook for a few minutes.

Pour into a 9 x 13 inch pan that has been lightly greased.

Chill slightly.

Cut into bars.

Will stay good in an airtight container in the fridge for at least a couple of weeks.
