Coconut Cranberry Breakfast Bars with no added sugar, all natural, and low glycemic. These are the perfect breakfast food! Enjoy with your favorite milk of choice!
Yields 10 Servings Quarter (2.5 Servings) Half (5 Servings) Default (10 Servings) Double (20 Servings) Triple (30 Servings) Prep Time 15 minsCook Time 1 hrTotal Time 1 hr 15 mins 4 large eggs
1 cup half and half (or whole milk)
1 cup water
3 tsp vanilla
0.50 tsp vanilla Protein Powder
1 cup almond flour (ground almonds)
1 cup Fructevia or Steviva Blend
1 cup unsweetened coconut
0.50 cup unsweetened cranberries
1 Place all ingredients into a large bowl.
2 Stir until well combined.
3 Pour into a greased (I use Pam) 9x13 casserole.
4 I sprinkle Fructevia sweetened coconut on top, also.
5 Bake for approximately 1 hour at 350ºF until golden brown.
