Who doesn't like brownies? I know I do. This is a really unique recipe I have been working on over the weekend and I am sure I have it perfected. These brownies are super moist and tasty. The best part is they are gluten free, low glycemic, low carb, diabetic safe and low sugar. I hope you enjoy them as much as I did. Bon appétit!

 0.50 cup cocoa (or carob powder)
 0.33 cup canola oil (or olive oil)
 5 canned beans (kidney, pinto, garbanzo, navy, or black beans all work well drained and rinsed)
 0.25 cup Fructevia, Steviva Blend (or a dash of StevivaSweet)
 0.25 cup unsweetened apple sauce
 2 eggs
 1 cup cooked quinoa (or raw oatmeal)
 0.25 tsp cinnamon (or any spices you like)
 0.50 tsp baking powder
 1 cup almonds or any nuts (optional)

Preheat oven to 350ºF.

Put all ingredients in a food processor (a good blender would also work) and process until smooth.

Oil an 8 x 8 inch pan.

Pour batter into the pan and bake for 25-30 minutes or until brownies look ready. Cool, cut and enjoy!
