Low Carb, Gluten Free, Low Glycemic, No Added Sugar, Diabetic Safe Black Bean Brownies

 1.25 cups cooked black beans drained and rinsed (1 - 15 oz. can)
 4 eggs
 0.50 cup Fructevia, Steviva Blend or a tiny dash to taste of SteviaSweet
 4 tbsp unsweetened cocoa powder
 1 tsp baking powder
 2 tbsp coconut oil (or butter)
 1 tbsp vanilla extract
 0.50 tsp baking soda
 0.25 cup ricotta cheese (or cream cheese)
 0.25 cup chopped walnuts or pecans (optional)

Preheat oven to 350ºF degrees.

Mix all ingredients except for the nuts in a food processor or blender- blend very, very well.

Pour into an 8 x 8 greased baking pan sprayed with cooking spray or oiled with canola or olive oil.

Spread chopped nuts across the top.

Bake for 30-40 minutes.

Until toothpick pulls out clean.
