Superfood Salad!

This superfood salad will tantalize all of your senses while providing a strong dose of antioxidants, vitamin E, B-vitamins, fiber, and healthy essential fats. After all, who doesn't love a salad with goat cheese and raspberries?

For Salad Mix:
 6 arugula
 1 avocado, peeled, pitted, and diced
 0.50 cup walnut halves
 0.33 cup fresh raspberries
 0.33 cup red onion, thinly sliced
 0.33 cup unsweetened dried cranberries
 0.25 cup soft goat cheese
For Salad Dressing:
 0.50 cup fresh raspberries
 0.33 cup olive oil
 2 tbsp unsweetened coconut milk
 1 tbsp mayonnaise
 1 tbsp Nectevia (Original Flavor)
 1 tbsp red wine vinegar
 0.50 tsp sea salt
 1 tsp poppy seeds

Arrange ingredients for salad mix in a large salad bowl or serving platter. Place dollops of goat cheese on top.

In a food processor or blender, combine raspberries, olive oil, coconut milk, mayonnaise, Nectevia, red wine vinegar and sea salt. Pulse until smooth. Stir in poppy seeds.

Pour dressing over salad and serve immediately. Refrigerate any leftover salad in an airtight container in the refrigerator.
