While consuming protein is the cornerstone of every low carb diet, I would recommend that you avoid pre-packaged meats and try to eat more fresh fish, chicken and even tofu as protein sources. "Crackers" should be lightly brown all over and come off the pan easily.
Options: I've made these also with egg white, a little garlic and curry powder whipped in (no Jello). Those were excellent too.
