Low Carb or Not... Grains Are a Must

Go ahead. Have a piece of bread. Have three. But, make it whole grain, and you'll be following government advice for eating right.

Three servings of whole grains each day will reduce your risk of heart disease and type 2 diabetes. It doesn't have to be bread. Brown or wild rice, oatmeal, cold cereal flakes, popcorn -- without the salt and butter -- and even trail mix will do.

Beware, just because a bread slice is dark, or a cracker looks grainy, doesn't mean the whole grain is there. They could be darkened by molasses or other coloring.

You need to look on the ingredient list to make sure you've got whole grains. The words "whole" or "whole grain" should come before the grain ingredient. And that should be the very first thing listed.

A whole grain is the entire seed or kernel -- from such grains as wheat, oats, corn or rye. They are packed with fiber, protein, carbohydrates, vitamins and minerals, and besides helping guard against heart disease and diabetes, they contain cancer-fighting antioxidants and other nutrients.

THE WHOLE ADVICE: Three daily servings of whole grains will reduce risks of heart disease and type 2 diabetes, the government says. Besides bread, oatmeal, cold whole grain cereal flakes, brown or wild rice, popcorn (saltless, butterless) and trail mix will do.

PRACTICE: Most Americans eat one serving or less each day, the Agriculture Department says. One reason could be that it's difficult to identify foods with whole grains.

HOW TO KNOW?: Look on the ingredient list to make sure whole grains are there. The words "whole" or "whole grain" should come before the grain ingredient, and that should be the very first thing listed.

Wash down those grains by drinking copious amounts of water. Drinking water flushes fats out of your system as well as increasing your metabolism. Sugar Free Low Carb Almond Joy Pie
Serves: 12
Carbs Per Serving: 5.5 g
Prep Time:<35 minutes

Skill Level: Easy

Ingredients:

The Crust
1 cup almond meal
2 tb spSteviva Brand Stevia Blend
3 tb sp butter
1/4 tsp coconut extract

Filling
1 package Jell-o Brand sugar free pudding -- chocolate
1 1/2 cups heavy cream
1/2 cup water

Topping
1 cup heavy cream
2 tb spSteviva Brand Stevia Blend
coconut extract 1/4 tsp

Directions:

Crust:
Preheat oven to 400° F
Lightly butter a 9" pie pan. Melt butter, in a small bowl mix almonds and Steviva Brand Stevia Blend. Add butter and extract. Mix well. Press mixture into pie pan, over bottom and up sides.
Bake at 400° F for about 10 minutes.
Keep checking it, you don't want it to burn. Should be somewhat brown.Cool crust and put in freezer while you are making filling.

Filling:
In a medium bowl put pudding mix, heavy cream and water. Beat with electric mixer until you get a thick mousse-like consistency. Spread this into crust.

Topping:
In a medium bowl put the heavy cream, Steviva Brand Stevia Blend
and coconut extract. Beat with electric mixer until soft peaks form. Spread over filling. Sprinkle pie with 2 Tb sp. of shredded coconut. Keep pie in refrigerator covered with plastic wrap.
