Low Carb Sugar Free White Chocolate Cheesecake
Makes approximately 10 servings.

The Crust
1-1/2 c. chopped macadamia nuts
2 tbsp. butter
1-2 tb sp.Steviva Blend or equivalent

Combine ingredients and press into 9" spring form pan. Bake at 325 degrees for 8-10 min.

The Filling
Combine 3 - 8oz. pkgs. cream cheese
1/2 c. Steviva Blend or equivalent
1/2 tsp. vanilla - mix till well blended.
Add 3 eggs -- one at a time, beating well after each. Then a
Add 8 oz. white chocolate, melted
Mix well.

Pour filling over crust, bake at 250 for 1hr. Then, turn off the oven, open the door, and let sit in the oven as it cools. Cooking at this low temperature for a longer period of time prevents cracking. Chill before serving. You can garnish with fresh berries.
