Low Carb Chicken
Breast in Mole Sauce
1 1/2 cups chopped onion
3 tablespoons vegetable oil
1/2 teaspoon coriander seed 1/2 teaspoon anise seed
2 tablespoons chili powder
2 teaspoons Steviva
Blend or equivalent
3/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
2 tablespoons unsweetened cocoa powder
2 tablespoons peanut butter
2 1/2 cups chicken broth
8 ounces canned tomatoes
3 whole garlic cloves – mashed
3/4 teaspoon salt
Simply add all the ingredients together in a medium size pot and let simmer
for 45 minutes.
Pour over 1 pound broiled chicken breast.
