Juice That Takes Low-Carb Path

Now that everything except the air we breathe comes in a low-carb version, why not juice?

Naked Juice, whose Arizona-New Mexico distributor is in Chandler, is test marketing four low-carb juices in the Phoenix area with such names as Apple to the Core and Oran-Joy!

"We're trying to satisfy that niche that doesn't want to give up fruits and vegetables but wants low carb," said Randy Maggio, area business manager at the Chandler office.

Fruits and vegetables, especially sweeter ones like bananas and carrots, are relatively high in carbohydrates and are restricted on the popular Atkins low-carb diet.


Low Carb Sugar Free Vanilla Macadamia Cheese Pie
Makes approximately 10 servings

Ingredients for Pie Shell:
8 squares graham crackers
1 Cup macadamia nuts
3 Tb spSteviva Blend or equivalent
6 Tb sp butter - melted

Ingredients for Cheese Pie Filling:
12oz cream cheese, softened
1 egg
3/4 Cup Steviva Blend or equivalent
3/4 Cup plain yogurt
1 Tb sp vanilla extract

Prepare pie shell: Break graham crackers into large pieces. Place in food processor or blender container. Add nuts and mix until finely crushed. Measure out 1 3/4 Cups of nut-graham mixture. Combine crumbs, butter, and Steviva Blend or equivalent in small bowl. Press firmly into bottom and up sides of 8 inch pie plate and refrigerate until firm.

Preheat oven to 350°F. Combine cream cheese, egg, yogurt, vanilla and Steviva Blend or equivalent in a medium bowl. Blend thoroughly. Pour cream cheese mixture over crust. Bake 20 minutes or until just set. Cool completely on wire rack. Refrigerate at least two hours before serving.

Carbohydrates per Serving: 3.19 - Carbohydrates per Serving minus Fiber: 3.01
