Sugar Free Low Carb Apple Cake
Serves: 16
Carbs Per Serving: 4g
Prep Time:<10 minutes

Skill Level: Moderate

Ingredients:
1 Cup Boiling Water (240ml)
2 Apple-Flavored Herbal Tea Bags
1 Apple
2 Tbs. Lemon Juice (30ml)
½ Tsp. Ground Cinnamon
2 Tsp. Steviva Brand Stevia Blend
4 Tsp. Vegetable Gum Blend (Guar Gum, Xanthan Gum)
½ Tsp. Baking Soda
½ Pound Ground Pecans (About 2 Cups)
Pinch Salt
Tiny Pinch Steviva Brand Stevia Powder
3/4 Cup Steviva Brand Stevia Blend
4 Eggs
3 Tbs. Oil
2 Tsp. Allspice Or Apple Pie Spice
1/4 Cup Walnut Pieces

Instructions:
Prepare apple tea concentrate and allow to cool.
Peel apple, slice thin, and then cut part into thin slices, the rest into a small dice. Sprinkle with lemon juice, cinnamon, and Steviva Blend or a tiny dash of Steviva Brand stevia.
Grease tube pan and arrange apple slices in an attractive pattern.
Mix (or grind) together, breaking up any lumps: baking soda, vegetable gum, ground nuts, Steviva Blend or a tiny dash of Steviva Brand stevia, pinch salt. The finer the nuts are ground, the finer the cake.
Combine liquid ingredients. Mix eggs, liquid and dry ingredients together until thoroughly wet .
Immediately pour into prepared pan. Swirl in apple pieces and optional walnuts. Bake at 350 F (175 C) -- loaf pans 40-50 minutes, round pans 25-35 minutes, cupcakes/muffins 15-25 minutes -- or until center springs back. Invert to serve.

NOTE: Use any combination of fruit and spices. Save the fruit carbs and get the fruit flavor from a commercial flavoring. Use apple or spice herb tea instead of water.
