All-Natural Banana Oatmeal Breakfast Bites


Preheat oven to 350ºF and line 2 cookie sheets with parchment paper.

In a large mixing bowl, cream together butter and Fructevia.

Add molasses, egg, and vanilla. Mix well.

Add mashed banana, flour, spices, and cornstarch. Mix just until completely incorporated.

Stir in oats and chocolate chips.

Using a cookie scoop, place dough onto lined cookie sheets 2″ apart.

Bake at 350 degrees for 8-9 minutes or until tops look dry.

Cool on a wire rack.

3/4 cup softened butter (not margarine)

2/3 cup Fructevia

1/4 cup molasses

1 egg

1 tsp vanilla extract

1 1/4 cup mashed over-ripe bananas

1 1/2 cup all purpose flour (whole wheat flour may be substituted)

1 tsp cinnamon

1/2 tsp all-spice

1/4 tsp nutmeg (freshly grated)

2 tsp cornstarch

3 cup old-fashioned oats (not instant oatmeal)

1 cup mini chocolate chips
