Low-Carb Peanut Butter & Jelly Thumbprint Cookies


Combine the cookie ingredients except for the jelly in a medium sized bowl.

Stir well until fully combined.

Roll into twenty 1 inch balls and place on a parchment covered cookie sheet.

Press a well into the center of each cookie with your thumb.

Place about ½ tsp of jelly in each center.

Bake in a preheated 350 degrees Fahrenheit oven for 11 minutes (if you bake longer than 11 minutes they will be dried out).

Sweetener Notes: This recipe recommends a variety of Steviva sweetener options.  For a no-calorie sweetener, try Steviva Blend, MonkSweet+, or a dash of SteviaSweet.  For a reduced-sugar option, try either one of our delicious Nectevia flavors, CocoSweet+, or Fructevia!

2 eggs

2 tbsp coconut flour

1 tsp vanilla extract

1/2 tsp baking powder

1/2 cup Steviva Blend

2 2/3 tbsp Steviva Blend

1/4 cup sugar free raspberry Jelly
