Preheat oven to 400ºF and line a baking sheet with parchment paper.
Wash and trim carrots. Pat completely dry with paper towel. Place on baking sheet.
Whisk together Nectevia, olive oil, balsamic vinegar, garlic and cinnamon. Pour half of glaze over carrots and use hands to toss and coat. Use fingers to slide thyme off stems into carrots. Season with salt and pepper. Bake 20 minutes.
Quickly brush the remainder of glaze onto carrots using a basting brush. Return to oven 20-30 minutes or until thickest part of carrots are fork tender.
