Who doesn't like brownies? I know I do. This is a really unique recipe I have been working on over the weekend and I am sure I have it perfected. These brownies are super moist and tasty. The best part is they are gluten free, low glycemic, low carb, diabetic safe and low sugar. I hope you enjoy them as much as I did. Bon appétit!
Yields 10 Servings Quarter (2.5 Servings) Half (5 Servings) Default (10 Servings) Double (20 Servings) Triple (30 Servings) Prep Time 25 minsCook Time 30 minsTotal Time 55 mins 0.50 cup cocoa (or carob powder)
0.33 cup canola oil (or olive oil)
5 canned beans (kidney, pinto, garbanzo, navy, or black beans all work well drained and rinsed)
0.25 cup Fructevia, Steviva Blend (or a dash of StevivaSweet)
0.25 cup unsweetened apple sauce
2 eggs
1 cup cooked quinoa (or raw oatmeal)
0.25 tsp cinnamon (or any spices you like)
0.50 tsp baking powder
1 cup almonds or any nuts (optional)
2 Put all ingredients in a food processor (a good blender would also work) and process until smooth.
4 Pour batter into the pan and bake for 25-30 minutes or until brownies look ready. Cool, cut and enjoy!
