Add the coffee and Nectevia to a 2 cup measuring cup.
Sprinkle the contents of the gelatin packet on top of the liquid.
Let it sit for 5 minutes.
Pour the hot water into the coffee mixture and whisk to blend/melt the gelatin.
Add the remaining ingredients and whisk to thoroughly combine.
Pour into silicone mold and slide into the refrigerator.
Let chill at least 9 hours. Overnight is best.
Remove from mold and top with shaved dark chocolate.
