
13 Oct No Added Sugar Low Glycemic Tomato Herb Salad

Fresh and delicious! This tomato herb salad will tantalize all the senses while avoiding that heavy carb-load.

3 fresh tomatoes – cut in ½” cubes (mix it up with a variety of different types of tomatoes. cherry, heirloom etc.)
0.25 cup scallions or green onions– sliced
2 tbsp olive oil
2 tbsp vinegar
1 tbsp water
1 tsp dried basil (or fresh!)
0.13 tsp dried oregano (or fresh!)
0.50 tsp Fructevia, Steviva Blend or a dash of Steviva Brands Pure Stevia Powder
Salt and pepper (to taste)

Combine veggies and in small bowl mix rest of ingredients.

Add this to vegetables and toss gently until spices are evenly spread throughout.

Chill overnight and enjoy!
