
13 Oct No Added Sugar Low Glycemic Tomato Herb Salad with Buffalo Mozzarella

Fresh and tantalizing. This delicious tomato medley will tantalize all of your senses!

3 fresh tomatoes – cut in ½” cubes (mix it up with a variety of different types of tomatoes. cherry, heirloom etc.)
1 cup sliced buffalo mozzarella (optional)
0.25 cup scallions or green onions– sliced
2 tbsp olive oil
1 tbsp balsamic or apple vinegar
1 tbsp water
1 tsp dried or fresh basil
0.13 tsp dried or fresh oregano
0.50 tsp Steviva Blend or a very very small dash of SteviaSweet!
1 dash salt and pepper to taste

Combine veggies and in small bowl mix rest of ingredients.

Add to vegetables and toss gently until spices are evenly spread throughout.

Add sliced buffalo mozzarella. Chill overnight and enjoy!
