For The Bars:
15 canned chickpeas, drained
2 eggs
0.67 cup egg whites
3 tbsp Fructevia
5 tbsp MonkSweet+
1.50 tsp baking powder
0.50 tsp baking soda
1 tbsp regular butter, melted
2 tsp vanilla extract
0.33 cup canned pumpkin
1 tsp pumpkin pie spice
0.33 cup nonfat plain Greek yogurt
For The Pumpkin Frosting:
8 1/3 less fat cream cheese
1 tbsp coconut oil
0.33 cup canned pumpkin
3 tbsp MonkSweet+
2Spray a 9×9 dish with olive oil spray.
3Place all ingredients in a blender and blend well until smooth.
4 Pour the batter into baking pan and bake for 45 minutes.
5Cool the cake and prepare frosting.
6Add frosting ingredients to blender or food processor and mix well until blended.
7Frost the bars and consume. Place in fridge when not eating.
Sweetener Notes: For no-added calories, try using: MonkSweet+, Steviva Blend, or SteviaSweet! If you desire a reduced-sugar option, use CocoSweet+ or Fructevia.
