For the Cake:

Preheat oven to 350ºF.

Combine all ingredients in a bowl and spread into a greased square cake pan. Bake for approximately 40 minutes.

For the Frosting:

Whip cream cheese and steviva blend with hand blender.

In separate bowl, whip the heavy cream until stiff. Fold the cream into the the cream cheese and Voila!

Spread over cake and enjoy!

Sweetener Notes:  For no-added calories, try using: MonkSweet+, Steviva Blend, or SteviaSweet!  If you desire a reduced-sugar option, use CocoSweet+ or Fructevia.  Also, if you don't have Steviva Blend Fine Powder, you can always take any of the sweeteners and blend in a blender or food processor until fine!

Banana Cake with Cream Cheese Frosting – No Grain, No Sugar

This banana cake with cream cheese frosting has absolutely no grain or sugar!

For the Cake:

1 cup almond flour

1 tsp baking powder

1/4 tsp sea salt

3 eggs

1/4 cup coconut oil, melted

1/4 cup Steviva Blend

1 cup mashed banana (about 2-3 bananas)

For the Frosting:

1 cup heavy cream

1 -8 oz. cream cheese

1/4 cup Steviva Blend Fine Powder
