Directions

Mix applesauce, Fructevia and eggs together well.

Add the mashed bananas, sour cream and vanilla to mixture and blend together.

Stir in baking soda and wheat flour. Add nuts and/or cinnamon if desired.

Pour batter into greased pans: 1 large loaf pan or will make 2 small loaves.

Bake at 350ºF degrees for 45-60 minutes. Do NOT over bake.

Use knife or toothpick test to make sure it's done.

Sweetener Notes:  For no-added calories, try using: MonkSweet+ or Steviva Blend.  If you desire a reduced-sugar option, use CocoSweet+ or Fructevia.

The best banana bread you will ever have!  Sweetened with fructose only making this perfect for those with diabetes!

Ingredients

1/2 cup applesauce (or use 1/2 cup canola oil)

1/2 cup Fructevia

2 eggs

2 cups large ripe mashed bananas

1/4 cup sour cream (optional- increases moistness)

1 tsp vanilla

1 tsp baking soda

2 cups whole wheat flour

1 tsp cinnamon (if desired)

1/2 cup nuts (if desired)
