Preheat oven to 350ºF.

Lightly spray a baking sheet with non-stick spray.

Cream Steviva Blend with margarine and applesauce.

Add egg and egg whites.

Mix well.

Add remaining ingredients.

Mix until blended.

Drop by teaspoonfuls onto cookie sheet.  

Bake for approx 9 minutes.

These cranberry cornmeal cookies are gluten free and delicious! Enjoyed best with your favorite milk of choice!

3/4 cups Steviva Blend

1 cup unsweetened applesauce

1/2 cup coconut oil (warmed) or non-hydrogenated margarine

1 egg

2 egg whites

2 tbsp liquid honey (or agave)

2 tsp vanilla extract

2 cups whole wheat flour

1 1/2 cups spelt flour

1 cup yellow cornmeal

2 tsp baking powder

1 1/2 cups dried cranberries
