In a large bowl, mix the gelatin with cold water and allow it to sit for at least 5 minutes.

Combine Steviva Blend Fine Powder and remaining hot water in a saucepan and stir.

With a candy thermometer, heat mixture over high heat until it reaches 250ºF.

Carefully and slowly mix the hot mixture to the rehydrated gelatin. Stir in the vanilla extract and cinnamon and inulin.

Whip this mixture on high with an electric mixer until stiff peaks form (similar to meringue).

Pour whipped mixture into a greased 13x9 pan.

Allow this to set-up overnight for at least 6 hours. Once set, cut into 1x1 squares!

Sprinkle the marshmallows with leftover Steviva Blend Fine Powder and store in an airtight container!

Sweetener Notes: This recipe calls for Steviva Blend Fine Powder, however, Steviva Blend will work.  Simply, blend the Steviva Blend  in a blender or food processor to make this powder finer. This recipe also calls for any flavor of Nectevia. Try Marrakesh Spice for a warm, spiced flavor or New England Maple for an extra indulgent sensation, while Madagascar Vanilla is best for a creamy and sweet flavor!  Try Original flavor for a sweet, honey like taste, but for added floral notes try the Sweet Provencal Anise or Masala Chai Spice for a spicy cinnamon sensation!

Only the finest inulin fiber will work for this recipe, which is why PreBiotica is recommended.

Sugar Free Homemade Marshmallows

Everyone loves a chewy, sweet marshmallow!  These homemade marshmallows are not just simple to make, but are also nearly calorie free (in moderation of course)!

2 tbsp gelatin (about 3 packets unflavored gelatin)

1/2 cup cold water

1/2 cup Steviva Blend Fine Powder

1 cup hot water

2 tbsp Nectevia (any flavor)

2 tsp vanilla extract

1 dash ground cinnamon

1 tbsp Inulin (PreBiotica)

    Author Note: This was my iteration of this recipe. Expect an update soon that will create an even chewier and creamier marshmallow. With that, this recipe is an excellent start (and perfect for SF hot chocolate!).
