4 eggs
0.50 cup Fructevia, Steviva Blend or a tiny dash to taste of SteviaSweet
4 tbsp unsweetened cocoa powder
1 tsp baking powder
2 tbsp coconut oil (or butter)
1 tbsp vanilla extract
0.50 tsp baking soda
0.25 cup ricotta cheese (or cream cheese)
0.25 cup chopped walnuts or pecans (optional)
1Preheat oven to 350ºF degrees.
2Mix all ingredients except for the nuts in a food processor or blender- blend very, very well.
3Pour into an 8 x 8 greased baking pan sprayed with cooking spray or oiled with canola or olive oil.
4Spread chopped nuts across the top.
6Until toothpick pulls out clean.
